They’re an excellent pairing with almost any main dish or entree, and they’re packed with delicious flavors almost everyone enjoys. They’re a new favorite at my house. Everyone loved them and went for seconds, even my picky eater. The lemon and parsley are very fresh and bright flavors that balance well with the savoriness of the Parmesan and garlic. BAKED PARMESAN ASPARAGUS FRIES Baked Asparagus Fries are a healthier alternative to regular fries. Asparagus stalks are coated in panko bread crumbs and parmesan cheese and baked until crispy. These days I’m all about vegetable fries. And I especially love baked vegetable fries. They satisfy my craving for fries without all the guilt. I’ve been making so many baked crispy panko coated foods that I started buying panko in bulk on Amazon. It’s cheaper than buying multiple small boxes that only last for 1-2 uses. Asparagus are coated in panko and parmesan cheese and baked until crispy for a healthier alternative to regular fries. I told you that batch of cinnamon streusel mini-muffins was making me want to make mini versions of everything, and I meant it. These pumpkin loaves include some melted white chocolate. Chicken and Dumpling Casserole Although the first day of spring has come and gone, it’s been chilly and blustery here in Kansas, so I thought I’d share this warm and delicious casserole for everyone that’s still eagerly awaiting spring before it’s hot and sweltering and nobody wants to bake a casserole. This is pure comfort food and perfect to warm the soul on a chilly day. Cauliflower Corn and Cucumber Salad Great Cauliflower Corn and Cucumber Salad recipe. The salad is filled with corn, cauliflower, cucumbers, peppers and dill with a mayo dressing. This salad was inspired by the Cauliflower Mix Salad. I love to just throw together whatever I have in my refrigerator and often that creation becomes a family favorite. I made this salad and hubby loved it, he just couldn’t get enough. Cauliflower florets with cucumbers and corn are such a great combination.
